Random vegan meal ideas_Easy all-in-one Casserole
This is a dinner I have more often recently. It's getting real cold here in Philly so I love warm, comforting and hearty meals. I often go for an afternoon walk on days I don't have school just to get some sunlight. I noticed I often get extremely hungry after the walk. So hungry that I don't even want to cook and just eat bread with peanut butter. I need something more substantial for dinner, you know. As the perfect solution to my hunger, this dish came to life. I just put everything in a dish and let it cook in the oven. I swear it tastes absolutely amazing. Thank me later

Ingredients: (Serves: 1-2)
1 cup broccoli
1/2 cup mushroom
1/4 medium bell pepper
1-2 gloves of garlic
1/4 medium onion
a handful of kale (or any greens really)
1/2 cup cooked chickpea (or any kind of beans. I wouldn't recommend tofu because it'll get mushy. But you can fried it up and serve it on top)
2 tbs nutritional yeast
1/4-1/2 tsp chili powder (if you like it spicy)
1/2 cup uncooked rice, rinsed.( I used pink madagascar rice, fancy huh, I know. But any rice would work. I tried it with white rice and it came out just as good)
1 1/4 cup vegetable broth

Instruction
1. Preheat your oven to 350F/175C
2. Slice mushroom. Dice onion and bell pepper. Cut broccoli into bite sized pieces. Mince garlic
3. Add the prepped veggies and everything else in a baking dish. If you use spinach as your greens, don't add it in how because it will get mushy. Add it in half way through the cooking process or have it raw on the side or completely skip it.
4. Put in the oven for 50-60 minutes or until the rice is cooked
