Random vegan meal ideas_Baked Apple pumpkin oatmeal

Call me basic whatsoever but it's pumpkin and pumpkin spiced everything season. It's been freezing cold these day. There was snow two days before I'm writing this. I have to say goodbye to quick and easy smoothies. It's oatmeal time. The thing with oatmeal is sometimes it can be boring and mushy. Baked oatmeal on the other hand is like the perfect solution for those who don't like mushy oatmeal. It is significantly thicker, almost like a cake but with a little bit of texture. It is wonderful.
So, let's get started, shall we?

Ingredients (Serves 2-3 people)
1 cup rolled oats
1/4 cup buckwheat (or you can just use all 1 1/4 cup oats)
1 apple
1/4 cup raisins (any dried fruit would do) 
1/4 cup pumpkin puree
1 cup plant milk
1 1/2 cup water
1/2 tbsp flax meal
1/2 tbsp chia seed ( or you can just use 1 tbsp of either)
1/4 cup of chopped nuts/seeds ( Because it's fall I opted for walnuts)
1 tsp cinnamon/pumpkin spiced
2 tbsp maple syrup/sugar

1. Preheat the oven to 350F/175C
2. Dice apples into bite size pieces
3. Mix pumpkin puree, water, plant milk, chia seed, flax meal, cinnamon/pumpkin spiced and maple syrup/sugar together in a baking dish. Make sure the pumpkin puree is well mixed in
4. Add apple, oats, buckwheat, raisins and chopped nuts/seeds and mix well
5. Cook in the oven for 35-45 minutes
Enjoy!! I topped mine with some peanut butter, blueberries and coconut shreds. You can pour over some plant milk and more maple syrup if you want.
